ABSTRACT
Enset (Kocho) is a staple food in Ethiopia, rich in essential minerals. This study analyzed the mineral content of both processed and unprocessed Enset products using atomic absorption spectroscopy. Results indicate that both forms are significant sources of potassium, sodium, calcium, magnesium, iron, zinc, copper, manganese, chromium, and lead. While processing slightly increased the mineral content, both forms remain valuable dietary sources. Notably, cadmium and cobalt were not detected in either form. These findings highlight the nutritional importance of Enset in the Ethiopian diet.
